Doug has offered advice on the size of fish I should be targeting. Herewith are photos of some of the 'appropriate' fish. The largest is about 1.5 pounds which I realise would task Mr Gilmore's expertise but I am willing to give him the benefit of the doubt.

Beautiful, Michael.

I caught a 14 pounder in September, along with three others that weighed from 7 to 12 pounds. Tripletail. Best eating fish other than Chilean Sea Bass.

I've never eaten tripletail, but I have eaten Chilean sea bass, and still find it hard to believe that anyone could think pompano isn't the best-tasting fish.

When it comes to saltwater fish, you could argue all day on the best tasting one because there are sooooo many.
Freshwater, not so much.

Fresh-run salmon as they return to their river from the sea are hard to beat, but those fish that live in the salt year round seem to always be more tasty....when not cooked too long. Even the lowly and common flounder is a tasty fish.
