Here it is, simple but makes a great meatloaf.

1 lb ground chuck
1 cup dry bread crumbs, Italian seasoned
2 well beaten eggs
3/4 cup milk
1 teaspoon yellow mustard
1/4 teaspoon salt

Mix eggs, mustard, salt and milk, then add to meat and bread crumb mixture.


topping:
3 Tblsp brown sugar
1/2 cup Ketchup (RedGold is best by far)
1 Tblsp. mustard.

bake at 350 for 40-50 minutes.

Old Frat, that is slightyly similar to the one I make. I add the dried onion chips but sometimes I use a slice or two of bread and pinch it off in little thin pieces in place of crackers or bread crumbs and I use 57 sauce to goosh it all up (my theory is the bread holds in a little bit of the fat to help flavor it) and then the topping varies after it is all made, some times tomato sauce or chili sauce, but mostly I use a spicy BBQ sauce and then bake it in the oven for an hour. I usually double the recipe though and use a couple pounds of burger to insure that I get at least two more meals of fried meatloaf sandwiches.

Ron,

I prefer BBQ sauce to Ketchup (or Catsup).

I grew up hating meatloaf. My mother made a very bland, dry version that I tried drowning in lots of ketchup, trying to imagine it was just a poorly executed hamburger.

In college, I helped a young Italian woman from New York move into her apartment. As a show of appreciation, she invited me over for dinner. When she told me we were having meatloaf, my heart sank.

Well, I put on a polite, happy face as the meal was served and I'll be darned if that wasn't one of the best meals I ever ate. The spices, the flavor...wow.

Fortunately, my wife makes excellent meatloaf (using BBQ sauce).

My favorite meatloaf condiment is chili sauce. See if you can track down Homade chili sauce. It is very close to mthe sauce my mother made when I was a kid and way better than any other commercial brand. https://www.instacart.com/safeway/produ ... auce-12-oz
