While I am not sure about Colston's theory on oysters and "fancy" dishes, I was looking for something different this weekend on a cold day. I had leftover brisket in the freezer form the prior weekend and I thought, "People like mac 'n' cheese with their BBQ. Why not make a dish out of that combination?"
I prepped some mac 'n' cheese (with about a cup and a half of chopped green chile) in a dutch oven and baked it. Meanwhile, I chopped up some brisket flat, coated it in BBQ sauce, and browned some panko crumbs in butter.
When it was ready, I switched the oven to broil, spread out the panko, and then spread the brisket on top of that. Broiled it for about 10 minutes. Mrs. Trout Bum said it was a keeper.
