And you call yourself a chef. Deviled ham is a more expensive substitute, if you want. I thing it's a bit more salty, but there you go.

Head Cheese never got to the South I guess. Look it up, it's a treat made from the scraps after the pig/hog killing is over. You have to be a man to chow down on head cheese seasoned with apple vinegar.

It did make it to the South, where's it's called souse meat. Made from the head and lots of vinegar and sage and pepper and other things. My mom made it when I was a kid.

Lutefisk is awful! I don't know why the Scandinavians even bothered to take the time to make it. I suppose it had to do with storage and avoiding rotting.

My father's parents were Finnish immigrants and I dreaded having to eat at their house. They didn't make one single, solitary thing that would even be considered food fit for humans. They both came from the northern coast so I suppose fish was the staple for protein in their early diet.
Even at 5, I learned how to "fake" eating and then to slip the glop into my pants pockets to dump in the toilet later. Mom and my other grandma were all in on my hiding the stuff to avoid eating it... I don't think my father liked it either, though he never challenged being served, and ate the stuff.

Don't even bother to look it up...the details and preparation are as gruesome as the end product.
